So the countdown is well and truly underway for Christmas but that doesn’t mean there is no reason to be cheerful as the wonderful team over at Eat and Think have brought to you their recipe of the week and this week is certain to warm you up in these cold winter nights! Enjoy
Each week we share one of our delicious recipes and this week it’s our delicious Prawn Pho, a perfect winter warmer.
Pho is traditionally a Vietnamese broth served with lots of vegetables and some noodles. This particular recipe is rich in immune supporting nutrients to help fight off winter colds. It’s also rich in veggies and will contribute generously towards your daily vegetable intake. INGREDIENTS ( SERVES 4)
¼ Red chilli
2 Garlic cloves
1 Stick lemongrass
4 Spring Onions
600mls Veggie stock
2 Tsp fish sauce
200g Cooked prawns
150g Rice noodles
100g Bean sprouts
INSTRUCTIONS: Finely chop the chilli and grate the ginger and garlic. Pour stock into a medium pan with lemongrass, chilli, garlic and ginger. Boil for 15 minutes. Turn down the heat and cover. Simmer for 15 minutes.
Add prawns, fish sauce, herbs, mushrooms and spring onions to the soup. Boil beansprouts for 2 minutes and noodles for 4 minutes. Remove lemongrass from the soup.
Add noodles to a bowl and pour soup over them. Serve with a wedge of lime. I like to top mine with a soft boiled egg which I boil for minutes and then cool immediately to get the desired effect before de-shelling and cutting in half.
